Splashes are caused by water trapped in the food being grilled. Very ‘watery’ vegetables, for example, splatter more than ‘drier’ vegetables. With grilled meat, the amount of water depends heavily on the quality of the meat. The better the quality of the meat, the less it will splatter on the grill. It will also splatter more if a lot of oil or fat has accumulated on the grill. If your food smoulders, this is often because too many delicate spices have been added to the marinade. These burn on the hot barbecue and smoke. If you want to avoid burning the herbs, cook marinated food at a lower temperature or add the herbs (e.g. in the form of herb butter) only after grilling.
