The production of mozzarella (buffalo milk) is also somewhat different and more complex than that of conventional cream cheese. The yoghurt maker can be used for the initial stages of cheese preparation (until the curd is formed and cut into cubes). After that, however, a number of further steps are necessary that do not take place in the yoghurt maker. There are also various recipes on the internet for making mozzarella.
Ricotta is made from whey, which has to be heated to 80/90 degrees on the cooker. A yoghurt maker is therefore not necessary here either.
