The Food Designer FD 500 is an appliance for use in molecular cuisine. The jelly pearls produced with it can have different consistencies. Depending on the recipe and dwell time in the gelling salt bath, the thin membrane can turn into a thick outer skin or the pearls can ‘gel’ completely.
